This cake is packed with honey flavor and a mild black tea kick. This would be an incredible accompaniment for a cup of strong, black tea at your next tea party!

Ingredients
Tea Cake
- 3 tablespoons Full Leaf Tea Company Organic Assam Tea
- 1 cup milk (I used oat milk)
- 3/4 cup butter (room temperature or softened in the microwave)
- 1/2 cup white sugar
- 1/3 cup honey
- 2 eggs
- 1/2 teaspoon vanilla extract
- 2 cups flour
- 2 teaspoons baking powder
Honey Whipped Cream
- 3 tablespoons honey
- 1/2 cup heavy cream (very cold)
Directions

In small sauce pan, combine the milk and tea leaves and simmer for 5 minutes. Pour into a heat proof container and refrigerate until cold.
*DO NOT SKIP THE FRIDGE OR YOUR BATTER WILL BE RUNNY*
- Once your milk is cold, preheat the oven to 350 degrees F.
- Cream the butter and sugar until smooth and lighter in color. Add the honey and vanilla extract and whisk thoroughly.
- Add the eggs one at a time, beating after each addition until smooth.
- In a separate bowl, combine the flour and baking powder.
- Strain the cold milk tea into the flour mixture and discard the used tea leaves. Add the butter mixture and fold together until just combined. Do not overmix!
- Add the batter into a greased loaf pan and bake for 50-60 minutes. If the top is getting too dark, add a piece of foil on top and continue baking until medium-dark brown and fully baked.
- While the cake is cooling, whip the cream in a clean, cold bowl until soft peaks form. Add the honey and whip until fully combined.
- Serve the cake slightly warm or chilled with a dollop of whipped cream on top!
